  • Nitrate content in beetroot juice have benefits to lower blood pressure, according to researchers from Queen Mary University in London.
    The study which is published in the Hypertension journal online edition found that blood pressure will decrease in 24 hours in people who consume nitrate tablets, and people who drink beetroot juice.
    This finding will be an exciting news for people who have high blood pressure, which is a risk factor for cardiovascular disease.
    The author of the study, Amrita Ahluwalia, professor of vascular biology at the Queen Mary’s William Harvey Research Institute, said the investigation was able to show that the nitrates found in beetroot juice have a beneficial effect on heart health by increasing levels of nitric oxide gas in the circulation.
    “We gave inorganic nitrate capsules or beetroot juice to healthy volunteers and compared their blood pressure responses and the biochemical changes occurring in the circulation,” Ahluwalia said according to ScienceDaily.
    “We showed that beetroot and nitrate capsules are equally effective in lowering blood pressure indicating that it is the nitrate content of beetroot juice that underlies its potential to reduce blood pressure. We also found that only a small amount of juice is needed — just 250ml — to have this effect, and that the higher the blood pressure at the start of the study the greater the decrease caused by the nitrate,”
    “Our previous study two years ago found that drinking beetroot juice lowered blood pressure; now we know how it works.” She added.
    Previous research, as quoted from ScienceDaily August 7, 2009, shows that the nitrate in beetroot juice increase stamina, which makes exercising not too exhausting. Because beetroot juice reduces the absorption of nitrate oxygen to a level that can not be achieved in any way.
  • Beets are a unique source of phytonutrients called betalains. Betanin and vulgaxanthin are the two best-studied betalains from beets, and both have been shown to provide antioxidant, anti-inflammatory, and detoxification support. The detox support provided by betalains includes support of some especially important Phase 2 detox steps involving glutathione. Although you can see these betalain pigments in other foods (like the stems of chard or rhubarb), the concentration of betalains in the peel and flesh of beets gives you an unexpectedly great opportunity for these health benefits.
  • In a recent study from Italy, beets were shown to be an especially important contributor of two carotenoids in the overall diet: lutein and zeaxanthin. Although much of the recent carotenoid research has focused on beta-carotene, both lutein and zeaxanthin are unique as health support molecules, particularly with respect to eye health and common age-related eye problems involving the macula and the retina. For eye health, beets may eventually turn out to require a category all their own.

    Two dishes of mini beet
    The beet that you bought recently were smaller than usual because they were of different types.  Quite a number of customers told me that they didn’t know how to cook them.  In view of this, I came up with two recipes:
    First: Cut apart the root and stems, peel and cut the root into pieces, add in 600cc hot water to blend in a high speed blender with the leaves.  You’ll have a glass of delicious drink.
    Second: Cut the stems into tiny cubes, add in olive oil and maple sprinkles, toss well. You’ll get a bowl of special snack. 感謝陳小妤小姐翻譯

      我靈機一觸,為他炮製個紅底飯。
    材料有紅菜頭、番茄、白米、八寶雜糧、橄欖油。
    先把白米洗淨,然後加2湯匙八寶雜量及丁方紅菜頭到白米,放入電飯煲,按制煮飯。
    番茄開邊後用橄欖油煮爛成漿備用。當飯熟就把茄漿攪混便成。

    Lucky Red
    Regulars complain about the poor stock market these days, so I made them a Lucky Red meal to boost their spirit.
    Ingredients include Beet, Tomato, Rice, 8-Grain and Olive Oil. Wash rice properly. Add 2 tablespoon 8-Grain and beet dices to the rice, put everything into the rice cooker, press the “cook” button. Cut tomatoes in halves and cook them in olive oil until mushy. When the rice is done, mix well with tomato paste and serve.

    Steam Beetroot
    Beet with leaves 1 pc (about 700g)
    Peel the beet and cut into pieces, place them nicely on a plate and steam them in the rice cooker when steaming rice.  Serve hot, warm or cold.  Tastes sweet. Good for detoxifying. 感謝張小姐翻譯

    Beet dices in brown rice
    Beet 1 pc (350g), brown rice 1 cup, filtered water 1 cup
    Skin the beet and cut into dices. Mix the beet dices, brown rice and filtered water together and cook them in an electric cooker. Smells good, tastes delicious too. 感謝張小姐翻譯

    Recipe by Ms. Hung from Central: Beet and minced beef soup
    08 紅菜頭 Beet
      紅菜頭連莖1個(500克)批皮切丁方、莖洗淨切段、過濾水800毫升、
      薑2片、碎牛肉四兩,豉油、生粉、橄欖油適量調味備用。
      將過濾水煲滾後放薑、丁方紅菜頭及莖,煮20-25分鐘後加入碎牛,滾3-5分鐘熄火。08Aj

    Beet with stem 1 pc (500g), filtered water 800ml, ginger 2 pc, minced beef 4 tael, soya sauce, corn flour and olive oil.
    After washing, peel and cut the beet into dices and the stems into strips.
    Bring the filtered water to a boil, put in ginger, beet dices and stems. After boiling for 20-25 minutes, put in the minced beef, boil for another 3-5 minutes and the soup is done.
